Instructions
- Preheat oven to 325°.
- Fry and crumble bacon, set aside.
- Mix well in saucepan: butter, ham, mushrooms (if desired), salt and pepper to taste. Sprinkle with flour and gradually stir in milk. Cook until thickened and set aside, stirring occasionally. (Cheese could be added here if you like more cheese.) You can also substitute artichoke hearts and/or fresh spinach if you want to make a vegetarian dish.
- Whisk eggs, evaporated milk, salt and pepper to combine well. Melt butter in a large skillet and scramble until eggs are set.
- In a buttered 9x13 baking dish, place a layer of the eggs, a layer of the sauce, and top with bacon and sprinkle with shredded cheese.
- Cover and bake for 1 hour at 300-325°.
Notes
This may be made the day before and placed in the refrigerator. If so, add 15 minutes to the baking time.
