Crab Bisque

I found this recipe in Mother's "Little Black Book" but we don't know where it came from.

Ingredients
  • 1/4 cup onion (chopped)
  • 3 cup milk
  • 13 oz canned lump crab meat ((2) 6 1/2 oz cans)
  • 1/2 cup butter
  • 1 tsp salt
  • 1 tall can evaporated milk
  • 2 tbsp flour
  • 1/8 tsp coriander
  • 1/2 tsp curry powder
  • 1/8 tsp white pepper
Instructions
  1. Sauté onion in butter until soft.
  2. Add flour and curry powder and cook 5 min., add milk, salt, coriander and pepper.
  3. Bring to a boil, reduce heat, stir in crabmeat and evaporated milk. Heat until steaming hot, but do not boil.
