Instructions for conventional baking: Use 2 Tbsp of the water to dissolve the yeast, set aside. In a large mixing bowl, add remaining water, butter, honey, egg, vanilla, whole wheat flour, mashed banana and salt. Mix well by hand or on low speed of a mixer. Stir in dissolved yeast and poppy seeds, add enough bread flour to make a smooth, non-sticky dough. Turn out onto lightly floured surface, knead gently until smooth, working in more flour if necessary. Form into ball, place in lightly oiled bowl, turn to oil surfaces, cover and let rise 1 hour in warm place out of drafts. Punch down, let rise again 45-60 minutes. Turn out on a floured surface, shape into loaf, let rise in greased loaf pan until light, about an hour. Bake at 375° about 30 minutes. Cool on rack.
