Kay Jackson’s Barbecued Spare Ribs

Ingredients
  • 3 lb country style spare ribs
  • 2 tbsp drippings or oil
  • 2 tbsp vinegar
  • 8 tbsp brown sugar
  • 1 cup ketchup
  • 2 tsp dry mustard
  • 1/2 cup celery (cut)
  • 1 large onion (chopped fine)
  • 4 tbsp lemon juice
  • dab of pepper
  • 3 tbsp Worcestershire sauce
  • 1 cup water
  • 1 tsp paprika
Instructions
  1. Season meat with salt and pepper, brown in drippings.
  2. Remove meat, add 1 c. water to the pan. Heat and mix with remaining ingredients in Dutch oven (or heavy pot).
  3. Add spare ribs, cook on top of stove or in oven 1 1/2 hour. (Bring to a boil, cook slowly until spare ribs fall apart.)
  4. Serve with sauce poured over ribs or in pitcher alongside.
