Lemon Chicken
From Peggy: Another family favorite from "Heart of the Home" by Susan Branch. The meat is extremely tender and gourmet-tasting. Everyone who has this raves about it - even Dad!

Ingredients

whole chicken breasts
(boned, skinned, halved)

flour

butter

olive oil

salt & pepper
(to taste)
Sauce

butter

parsley
(finely chopped)

juice from 1/2 a lemon
Instructions

Preheat the oven to 250°.

Wash chicken and pat dry with paper towels. Pound chicken flat with a meat mallet. Put the flour in a large plastic bag and drop the chicken pieces in and shake to coat.

Melt the butter and oil in a large skillet, set heat to moderately high, add chicken and cook approximately 3 minutes per side. When they are done, salt and pepper them and place on oven-proof dish in a 250° oven while you make the sauce.
Sauce

Add butter to chicken skillet and melt, scraping up brown bits in pan. Remove from heat; add parsley and lemon. Pour hot sauce over chicken and serve.
