Lemon Chicken

From Peggy: Another family favorite from "Heart of the Home" by Susan Branch. The meat is extremely tender and gourmet-tasting. Everyone who has this raves about it - even Dad!

Ingredients
  • 3 whole chicken breasts (boned, skinned, halved)
  • 1 1/2 cup flour
  • 1/3 cup butter
  • 2 tbsp olive oil
  • salt & pepper (to taste)
  • Sauce
  • 4 tbsp butter
  • 4 tbsp parsley (finely chopped)
  • juice from 1/2 a lemon
Instructions
  1. Preheat the oven to 250°.
  2. Wash chicken and pat dry with paper towels. Pound chicken flat with a meat mallet. Put the flour in a large plastic bag and drop the chicken pieces in and shake to coat.
  3. Melt the butter and oil in a large skillet, set heat to moderately high, add chicken and cook approximately 3 minutes per side. When they are done, salt and pepper them and place on oven-proof dish in a 250° oven while you make the sauce.

  5. Add butter to chicken skillet and melt, scraping up brown bits in pan. Remove from heat; add parsley and lemon. Pour hot sauce over chicken and serve.
