Mother’s Baked Beans

She got this recipe from her mother, Grandma White. This was a Saturday staple when we were growing up. *This recipe involves overnight soaking, which is not included in the total time.

Ingredients
  • 2 lb dry yellow-eye beans (looked over)
  • 1 tsp baking soda
  • 1 onion (chopped or whole)
  • 2 tsp salt (and pepper, to taste)
  • 1/2 - 3/4 cup molasses
  • 3/4 cup brown sugar (about 1/4 box)
  • 1 tsp dry mustard
  • 1/4 lb chunk of salt pork (cut criss-cross)
Instructions
  1. Look over the beans, wash and soak overnight covered with water.
  2. The next morning, add baking soda and parboil in same water until skins loosen, about 40 minutes. Skim foam off occasionally. Drain in colander.
  3. Return to pot and cover with water and add other ingredients. Taste to correct seasoning.
  4. Bake at 325° for 5-6 hours. Stir in a little water if it starts looking dry on top.
Recipe Notes

Instead of the overnight soak, you can cover the beans with water, bring to a boil for 2 minutes, then let sit for an hour before proceeding with the recipe.
