Mother’s Banana Bread

Ingredients
  • 1 cup sugar
  • 1/2 cup shortening
  • 2 eggs
  • 3 bananas (mashed)
  • 2 cup flour
  • 1 tsp baking soda
  • 1 tsp salt
  • Optional
  • 1/2 cup nuts (chopped)
  • 1 tbsp orange zest
Instructions
  1. Preheat the oven to 350°.
  2. In a large bowl or mixer, mix sugar, shortening, and eggs until well blended.
  3. Add the mashed bananas.
  4. Add the dry ingredients. Mix well and add nuts and/or orange zest, if you wish.
  5. Put into greased loaf pan, bake at 350° for about 1 hour. Check for doneness right in the center (it should not be doughy or sticky at all, but moist). Remove from pans to cool so the bread doesn't get soggy.
