Mother’s Beef Stroganoff

Ingredients
  • 1 lb sirloin or round steak (1 1/2" thick)
  • 1 clove of garlic (chopped)
  • 3 tbsp flour
  • 1 3/4 tsp salt
  • 1/4 tsp pepper
  • 1 tsp paprika
  • 1/2 cup Crisco
  • 1/2 cup onion (chopped)
  • 1 can condensed beef consommé
  • 1/2 cup water
  • 1 lb fresh mushrooms (sliced)
  • 1/2 cup sour cream
  • 2 tbsp chives
Instructions
  1. Rub both sides of meat with garlic, cut meat into strips 1 1/2" x 1". Mix flour, salt, pepper, paprika, add meat strips, toss lightly. Reserve remaining flour mixture.
  2. Heat Crisco in heavy skillet, add meat and brown well; add onion, cook until onions are transparent. Add remaining flour mixture, consommé, water, and mushrooms. Cover and cook slowly until meat is tender, about 1 1/2 hours, stirring occasionally.
  3. Remove cover, cook until mixture thickens slightly. Add sour cream and chives, blend.
  4. Serve over hot cooked noodles.
Recipe Notes

To de-calorize, spray skillet with Pam and cut way back on the Crisco; you can also substitute fat-free yogurt for the sour cream.
