Mother’s Biscuits

Many memories of these delicious, flaky biscuits topped with strawberries, or maple syrup, or butter with a mug of steaming cocoa alongside for a light Sunday night supper. This recipe originally came from Grandma Woods (Percy's mother). Makes about 14 biscuits.

Ingredients
  • 3 cup flour (sifted)
  • 3 tsp baking powder
  • 1 tsp baking soda (scant)
  • 1/2 tsp salt
  • 5 1/2 tbsp shortening (or butter)
  • 1 1/2 cup buttermilk
Instructions
  1. Preheat the oven to 400°.
  2. Sift into a bowl: flour, baking powder, baking soda, and salt.
  3. Cut in the shortening or butter until clumps are about pea sized.
  4. Add buttermilk, stir minimally. Put on a floured surface, knead lightly, no more than 16 turns.
  5. Pat out to 1/2" - 3/4" thick. Cut rounds with a biscuit cutter (or a glass). Re roll scraps and cut more biscuits. Repeat until all the dough is used.
  6. Place on a baking sheet, bake at 400° for 12-15 minutes, until starting to turn golden on the edges.
