Mother’s Chili

Mother does not remember where she got this recipe, but she has it first at Larry and Kathy's wedding.

Ingredients
  • 1 lb ground beef
  • 1 large onion (chopped)
  • 1/2 green or red pepper (chopped)
  • 1/2 cup All-Bran
  • 15 oz can red kidney beans (undrained)
  • 28 oz can whole peeled tomatoes (broken up, undrained)
  • 8 oz can tomato sauce
  • 1/2 cup water
  • 1 tbsp chili powder (or to taste)
  • 1/8 tsp garlic powder
  • 1 1/2 tsp sugar
  • 1 tsp salt
  • 1 bay leaf
Instructions
  1. Combine beef, onion, and pepper in the bottom of a heavy pot. Cook on medium heat until meat is browned and vegetables are softening.
  2. Stir in all remaining ingredients. Cook over low heat about one hour, stirring occasionally.
  3. Serve with corn bread.
Recipe Notes

This is also great started in the slow-cooker before you leave the house in the morning. How nice to come into the house after a full day's work and have supper ready! You may need to simmer it at a higher temperature with the cover off to evaporate a little while you make the corn bread or a salad.
