Mother’s Walnut Chicken

Ingredients
  • 5 tbsp crisco oil (divided)
  • 5 tsp soy sauce (divided)
  • 3 tsp corn starch (divided)
  • whole boneless skinless chicken breasts (cut into 1 inch pieces)
  • 1/2 cup chicken broth
  • 1/2 tsp ground ginger
  • 1/2 tsp dried red pepper
  • 1 medium onion (cut into 1 inch pieces)
  • 1 garlic clove (minced)
  • 1/2 lb broccoil (cut into 1 inch pieces)
  • 1 red bell pepper (cut into 1 inch pieces)
  • 1/2 cup walnuts (chopped)
  • To Serve
  • 3 cup hot cooked rice
Instructions
  1. Mix 1 Tbsp oil, 2 tsp soy sauce, and 1 tsp corn starch in a small bowl. Stir in chicken to coat, cover and refrigerate for 30 minutes.
  2. Meanwhile, mix chicken broth, ginger, 3 Tbsp soy sauce, and 2 tsp corn starch. Set aside.
  3. Heat remaining oil in large skillet. Stir fry chicken mixture and dried red pepper over medium high heat until chicken is no longer pink. Remove chicken from skillet. Stir fry onion, garlic, and red pepper until onion is tender. Add broccoli, stir fry until tender. Add broth mixture and chicken, cook stirring constantly until thickened. Stir in walnuts. Serve with hot cooked rice.
