Plum Good (Conserve)

Ingredients
  • 2 1/2 qt chopped pitted plums (about 4 cups)
  • 3/4 cup orange peel (thinly sliced)
  • 2 cup seedless raisins
  • 6 cup sugar
  • 2 cup broken pecans (or other nuts)
  • 1 3/4 cup chopped orange pulp (about 2 large oranges)
Instructions
  1. Combine plums, orange pulp and peel, raisins and sugar. Slowly bring to boiling, stirring occasionally until sugar dissolves.
  2. Cook rapidly almost to jellying point, about 15-20 minutes. As mixture thickens, stir frequently to prevent sticking. Add nuts the last 5 minutes of cooking.
  3. Pour boiling hot into clean, hot jars. Adjust lids; process 10-15 minutes immersed in water bath.
  4. Yields about 10 half-pints.
Recipe Notes

From Acacia: I made this recently with a few adjustments. I used a combination of orange zest and orange peel rather than all peel; instead of raisins I had a dried fruit combination of cherries, cranberries, and blueberries on hand; I didn't have pecans so I used a mixture of walnuts and hazelnuts; and I noted that the pulp from 3 medium oranges was short, so 2 large or 4 medium is about the right volume. I often bring a jar of this to parties to accompany homemade cheese crackers and it's the most popular item there!
