Smoked Turkey & Tortellini Salad with Chutney Yogurt Dressing

Another of my sister-in-law Ann's contributions, from the New York Times magazine section. Vary the vegetables for a different taste.

Ingredients
  • 4 oz smoked turkey (get as chunk from the deli, cut bite-sized)
  • 6 oz red or yellow bell pepper (chopped)
  • 4 oz green beans
  • 8 oz fresh cheese tortellini
  • soft salad greens
  • 1 large fresh tomato
  • Dressing
  • 1 medium clove of garlic
  • 1 tbsp lemon juice
  • 1/3 cup nonfat yogurt
  • 2 tbsp mango or other chutney
  • 1 tsp Dijon mustard
Instructions
  1. Place turkey and pepper in a large bowl. Cook green beans and tortellini in boiling, salted water according to package directions, drain. Add to bowl with turkey and pepper.
  2. Pulse all dressing ingredients in a blender until combined. Pour over ingredients in the bowl and toss to coat.
  3. Arrange salad greens and tomatoes on a salad plate or platter, top with pasta mixture and serve.
