Spinach Quiche

Before I went back to work, I participated in many neighborhood Bible studies. I got this recipe from an end-of-year brunch at a study in Verona. My copy is getting pretty dog-eared!

Ingredients
  • 2 tbsp shallots or green onions (minced)
  • 2 tbsp butter
  • 10 oz package of frozen spinach
  • 1/2 tsp salt
  • 1/8 tsp pepper
  • 1/8 tsp nutmeg
  • 1/2 cup ricotta cheese (or dry, small curd cottage cheese)
  • 3 eggs
  • 1/2 cup heavy cream (or evaporated milk)
  • 1/4 cup swiss cheese (coarsely shredded)
  • 9" pie shell (homemade or frozen)
  • Optional
  • crisply cooked bacon crumbles
Instructions
  1. Sauté shallots in butter. Add spinach and cook until excess water evaporates.
  2. Remove from heat and add salt, pepper, nutmeg, and ricotta cheese.
  3. In a separate bowl, beat eggs and cream together until well mixed, but not frothy.
  4. Stir spinach mixture into egg mixture and add cheese. Pour into prepared pie shell.
  5. Bake at 375° for 25-30 minutes, until set.
