Spinach Quiche
Before I went back to work, I participated in many neighborhood Bible studies. I got this recipe from an end-of-year brunch at a study in Verona. My copy is getting pretty dog-eared!

Ingredients

shallots or green onions
(minced)

butter

package of frozen spinach

salt

pepper

nutmeg

cup
ricotta cheese
(or dry, small curd cottage cheese)

eggs

cup
heavy cream
(or evaporated milk)

1/4
cup
swiss cheese
(coarsely shredded)

9" pie shell
(homemade or frozen)
Optional
-
crisply cooked bacon crumbles
Instructions

Sauté shallots in butter. Add spinach and cook until excess water evaporates.

Remove from heat and add salt, pepper, nutmeg, and ricotta cheese.

In a separate bowl, beat eggs and cream together until well mixed, but not frothy.

Stir spinach mixture into egg mixture and add cheese. Pour into prepared pie shell.

Bake at 375° for 25-30 minutes, until set.
