Mother’s Baked Beans

She got this recipe from her mother, Grandma White. This was a Saturday staple when we were growing up.

  • Look over the beans, wash and soak overnight covered with water.
  • The next morning, add baking soda and parboil in same water until skins loosen, about 40 minutes. Skim foam off occasionally. Drain in colander.
  • Return to pot and cover with water and add other ingredients. Taste to correct seasoning.
  • Bake at 325° for 5-6 hours. Stir in a little water if it starts looking dry on top.

Notes

Instead of the overnight soak, you can cover the beans with water, bring to a boil for 2 minutes, then let sit for an hour before proceeding with the recipe.
