Spinach Quiche

Before I went back to work, I participated in many neighborhood Bible studies. I got this recipe from an end-of-year brunch at a study in Verona. My copy is getting pretty dog-eared!

  • Sauté shallots in butter. Add spinach and cook until excess water evaporates.
  • Remove from heat and add salt, pepper, nutmeg, and ricotta cheese.
  • In a separate bowl, beat eggs and cream together until well mixed, but not frothy.
  • Stir spinach mixture into egg mixture and add cheese. Pour into prepared pie shell.
  • Bake at 375° for 25-30 minutes, until set.
